Looking to get my daughter started in Legos, but still want to have fun myself! Which one of these do you think would be the best one to get to get started?

Every child is different I suppose. You mentioned that you also are excited about it. I think that is key... finding something that you like to share with your daughter. The Frozen set would be OK if it interests you and her.
My favorites are buildings. I always recommend the CREATOR line sets. Each set can be taken apart and rebuilt into 2 more alternate builds (total of 3 builds in one set... with instructions for each). I really like the RV camper set. The last two are animals. I love these. Both will probably be retired soon and retail for about $15 each. I like the red dragon even more after building it. Creator usually has one or two animal sets so even after these retire they will probably be replaced with more. I think the green dinosaur creator set has already been released (replacement for the these).
Changing Seasons might be retiring soon (not sure). I've bought one but haven't built it yet (same for the corner Deli (love the colors one the Deli). The lighthouse is fairly new and looks interesting.
While the minifigures in the Creator sets aren't exciting (or aren't in the sets at all.. like the animals sets) I like buying my own minifigures from the CMF (blind bag) minifigures. Buy what you like and combine with your Creator sets.
If you are interested in the minidolls (Friends and Elves and Princesses) I like the fantasy appeal of the Elves sets. Friends has some nice builds. The School and Hotel are the two that look like the most fun to build but if your daughter is young you might prefer one of the smaller shops.
